Sunflower seeds are rich in unsaturated fatty acids (mainly linoleic and oleic), which contribute to normalization of blood cholesterol and its metabolism. Sunflower seeds contain 20% of protein that includes all the essential amino acids. For example, methionine that takes an active part in fat metabolism of the human body. By the content of methionine sunflower seeds significantly outperform peanuts, walnuts, hazelnuts which are famous for this amino acid.

In addition, the seeds contain a significant amount of magnesium that is necessary to normalize and maintain good cardio-vascular system. Thus 100 grams of sunflower seeds contain 311 mg of magnesium which is up to 6 times higher than in rye bread.

Even 50 grams of sunflower seeds are able to completely satisfy the human body's need for fatty acids, that is why they are so useful. Such an amount would be approximately equivalent to 25 grams of sunflower oil.
