Pearl barley groats are produced from grains of barley. Pearl barley is the kernels of barley grains, purified from the outer shells, rubbed and polished.

The compositionof pearl barley includes (per 100g):
• Proteins - 9,3 g, barley protein is more important than wheat protein because it contains

lysine- an indispensable amino acid
• Fats - 1,1 g
• Starch - 65.6 g
• Fiber - 1.0 g, a large amount of fiber makes pearl barley low digestive foodstuff
 • Minerals - 10mg of sodium, 172mg of potassium, 38mg of calcium, 40mg of magnesium, 32.3 mg of phosphorus, 1.8 mg of iron; among the groats pearl barley is the leader in the amount of phosphorus
 • Vitamins - B1, B2, PP.

Depending on the size of grains of pearl barley is divided into numbers:
• pearl barley № 1 - has an elongated nucleus with rounded ends, require prolonged cooking.
